Arugula Pasta Salad with Creamy Goat Cheese

Time for a change from the traditional pasta salad. This fresh tasting recipe is quick and easy and great for your summer next get-together. Add your own brand of freshness with cherry tomatoes and arugula right from your AeroGarden!

INGREDIENTS

1 cup fusilli pasta 
1/2 cup goat cheese, crumbled – try to shop local!
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon sea salt and pepper
1/4 teaspoon red pepper flakes (optional for spice)
3/4 cup baby arugula
1 cup cherry tomatoes, thinly sliced
1/2 cup pitted kalamata olives, sliced

1 Avocado, sliced (optional)

PREPARATION

  1. Bring a salted pot of water to a boil and cook the pasta until it's al dente, according to the directions on the box. Drain the pasta, saving 1 cup of the water, and place the pasta into a large serving bowl.
  2. Sprinkle the goat cheese, salt, pepper, and red pepper flakes over the pasta, then drizzle the olive oil and lemon juice. Pour about 1/3 cup of the saved pasta water over top and toss until the pasta is creamy.
  3. Add the arugula, tomatoes and olives and toss to combine. If the pasta is too dry, add more of the pasta water and stir. You can also add in more olive oil if desired. Taste and season more if needed. Serve immediately.
