This simple syrup is sure to be an easy pantry staple to add a pinch of freshness wherever you’d usually like a little sweetness. Muddling the mint before adding the water allows the oils to infuse themselves with the honey bringing out a more prominent freshness to the end result.
1 bunch mint
½ c Water
Mason jar with lid or jar with swing-top closure
In a saucepan, add 1c Honey and one bunch of mint over medium-low heat.
Stir to incorporate mint into honey, lightly tamping with a wooden spoon to release mint oils into honey.
Add the water to the mixture and bring to a light boil.
Remove from heat and stir to combine.
Let cool and pour through a strainer into a mason jar or swing-top bottle.
Will keep for 3 to 4 weeks when refrigerated.
