Fresh Mint Brownies

Brownies so incredible you'll want to eat them all!

When growing mint in your AeroGarden, you need to continually trim back the plant or it will completely take over. Be sure to check the reservoir, because it has been known to grow under water! Mint is a great herb to have on hand and very versatile. It can be used in sweet and savory meals as well as beverages.

Today we are going to focus on sweet! Have you ever had fresh mint brownies? Using a handful of mint from your AeroGarden, you can whip up this recipe in no time and serve it for your next holiday meal, or save them all for yourself! No one is judging.

INGREDIENTS

  • 1 cup granulated sugar
  • 1 handful (around 40 leaves) fresh mint from your AeroGarden
  • ½ cup all-purpose flour
  • ⅔ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt 
  • ½ cup salted butter
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup chocolate chips (or more)
  • 1/4 cup slivered almonds or walnuts – optional


PREPARATION
(servings: 12)

  • Preheat the oven to 350 degrees and grease an 8×8 square pan.
  • In a blender, blend together the sugar and mint, until the mint is finely ground. Pour into a bowl and set aside.
  • In a small bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.
  • In a small saucepan, melt the butter completely, then add it to the mint sugar and whisk until the sugar begins to dissolve, about a minute.
  • Whisk in the eggs, then add in the vanilla extract. 
  • Gently fold in the dry ingredients using  a wooden spoon or rubber spatula, until almost blended, then add in the chocolate chips.
  • Pour mixture into the prepared pan and bake for 20-25 minutes, or until the top is no longer raw and the middle is slightly jiggly but not liquid. This gives you a slightly under baked brownie with a nice gooey center. If you prefer fully cooked, cook a little longer until a toothpick comes out clean.

Let cool before cutting and serving!
