Hey AeroGardeners! Use fresh basil and cherry tomatoes from your garden to make this tasty Margherita Pizza. Great for the whole family!
Makes: 1 pizza. Multiply to desired amount
1 pre-made pizza dough
1 tablespoon extra-virgin olive oil
handfull cherry tomatoes
1 garlic clove, minced
1/2 teaspoon crushed fennel seeds,
1/4 teaspoon dried red pepper flakes
1/2 - 1 fresh mozzarella ball(4-ounce), diced
6-10 leaves fresh basil leaves, chopped
Preheat oven to 420°F. Roll dough onto a large baking sheet; pull to a rectangle, pinching any tears to seal. Fold over edge of dough to make crust.
Heat large skillet over high heat and add the oil and tomatoes; sprinkle with salt and pepper. Sauté until tomatoes are browning and beginning to break down, about 5 minutes. Transfer to large bowl. Mix in garlic, fennel, and crushed red pepper. Crush tomatoes in bowl, using back of your fork, leaving some large chunks intact. Season mixture with salt and pepper to taste. Sprinkle cheese mixture evenly over dough, then spoon on tomato mixture in dollops, leaving some cheese uncovered. Bake pizza until crust is crisp and brown, 25 to 30 minutes. Garnish with fresh chopped basil leaves.
