Roasted Bell Peppers

Roasting bell peppers is extremely easy, and results in a flavor enhanced pepper that can be eaten alone, added to any meal, or transformed into something completely new! 

In fact, it is so easy, that you have no excuse not to try this recipe!

*This recipe focuses on bell peppers, but you can use this method for any type of pepper. 


Directions: 

Preheat the oven to 420 degrees. Brush a baking sheet lightly with olive oil and lay the peppers on their sides. Do not overcrowd your tray. Bake the peppers for 20 minutes, flip peppers over, and bake for another 20 minutes. 

Check to make sure the peppers are fully roasted. The skin will be charred and soft, and the peppers will be slightly collapsed. If they don't look ready, let them roast for a few more minutes while continually checking. Once done, remove from oven and transfer the peppers to a plate or bowl, and cover with plastic wrap. Let them sit for around 20 minutes. Allowing them to rest makes it easier to peel off the skin. 


Quick Method:

Turn your oven on to broil. Brush a baking sheet lightly with olive oil and lay the peppers on their sides. Broil the peppers for 5 minutes or until you start to see charring on the top of the pepper. Rotate one quarter and broil another 5 minutes. Continue to rotate peppers and broil in 5 minute intervals until the whole pepper is charred. Remove from oven, transfer to a plate or bowl, cover with plastic wrap and let sit for 20 minutes. Remove skin.
