Recipe: Peanut Spring Rolls

*Featuring Fresh Herbs from AeroGarden

  • Butter Lettuce (Torn into Half Pieces with Core Removed)
  • Green Papaya (Peeled, Shredded)
  • Carrot (Peeled, Shredded)
  • AeroGarden *Fresh Herbs Mint, Basil (Julienned)
  • Edible Flowers
  • Summer Roll Wrappers

In a large bowl, moisten a summer roll wrapper. Sprinkle edible flowers, top with lettuce, then papaya, carrot and then fresh herbs. Let sit for about 1 minute so wrapper is flexible. Start on bottom end and fold up. Then fold in sides. Then complete the roll. Serve with coconut peanut sauce recipe below. Optional to add grilled shrimp or chicken.

Coconut Peanut Sauce

  • 1/2 Cup Smooth Peanut Butter
  • 1/2 Cup Sweet Thai Chili Sauce
  • 1/2 Cup Coconut Milk

In a food processor combine all ingredients and blend until smooth. Can always add more sweet chili to thin if you like spicy or coconut milk for mild.
