
Skip the gelatinous canned cranberry “sauce” this Thanksgiving, and instead serve this refreshing homemade relish with fresh mint grown in your AeroGarden! The combination of zesty orange, with the sour cranberry mixed with the menthol mint is sure to be a crowd favorite, especially combined with stuffing, mashed potatoes, and turkey!
Makes about 3 cups
INGREDIENTS
- 1 bag of fresh or frozen cranberries (12 ounces)
- 1 tsp orange zest
- 2 oranges
- 1/3 cup sugar
- 2 tbsp chopped fresh mint
- 1/2 tbsp minced ginger
PREPARATION
In a food processor or blender, pulse the cranberries until coarsely chopped, then transfer to a bowl.
Using a sharp knife, remove the peels and the white piths from the oranges, and release the orange slices from their membrane. Coarsely chop the oranges, then add into the bowl of cranberries.
Stir in the sugar, fresh mint, ginger and orange zest until thoroughly mixed.
Cover the bowl with beeswax wrap (or saran wrap, but you really should switch) and let sit for a minimum of 2 hours before serving.
