Meatloaf - you either love it or hate it. You have to believe us when we say, however, that this Pizza Meatloaf recipe is a crowd-pleaser. We challenge you to make it for dinner one night this week. Trust us, your kids will be running to the dinner table. Plus, you get to use fresh herbs from your AeroGarden. What more could you want?
INGREDIENTS
- 1 lb. ground beef
- 1 cup pizza sauce (divided as ¼ cup and ¾ cup)
- ½ cup italian breadcrumbs
- 1 egg
- 1 green bell pepper, roughly chopped
- ½ yellow onion, finely chopped
- 3 garlic cloves, minced
- Fresh oregano
- Kosher salt
- Freshly ground black pepper
- 2 cups of shredded mozzarella cheese
- Pepperoni slices
- Sliced black olives
- Freshly grated parmesan cheese
- Fresh basil
INSTRUCTIONS
- Preheat the oven to 375°F.
- In a large bowl, combine the beef, ¼ cup pizza sauce, bread crumbs, egg, ½ of the bell pepper, onion, garlic, and oregano. Season with salt and pepper to taste.
- Press the meat mixture into an 8” round pan, then brush the remaining pizza sauce over the top of the meat mixture.
- Bake the meatloaf for 20 minutes. Remove from the oven and top with mozzarella, remaining bell peppers, pepperoni, and olives. Bake for an additional 25 minutes. Make sure the cheese is melted and the beef is cooked throughout.
- Sprinkle with parmesan, give it a kiss of fresh basil, and enjoy!
